Nestled between the chalky clay plateaus and verdant valleys of the Côte des Bar, Champagne Stéphane Fèvre is a family estate that has perpetuated authentic viticulture for more than 300 years in Ville sur Arce. The family’s passion for wine has been transmitted from generation to generation since the late 18th century, with a history that includes the golden age of local viticulture and the struggles of Aube vignerons to defend their Champagne appellation in 1911.
Today, the estate is managed by Stéphane Fèvre and Stella Fèvre, who cultivate 8 hectares of vineyards, 5.71 hectares of which are certified organic. The vineyards are planted primarily with Pinot Noir (80%), followed by Chardonnay (15%), and a touch of Pinot Blanc (5%). The unique clay limestone soils of Ville sur Arce provide ideal conditions for producing wines of remarkable finesse and balance.
Champagne Stéphane Fèvre is classified as a Récoltant Manipulant, allowing the family to oversee every step from vine to bottle. Their approach is rooted in respect for biodiversity, gentle vinification, and minimal intervention. The estate’s small size enables the creation of characterful cuvées, each given the time and freedom to express its unique terroir.
Key cuvées include:
Val Barmont – Brut Nature: 100% Chardonnay from the Val Barmont parcel on clay limestone soil.
Eproué – Extra Brut: 100% Pinot Noir from the Eproué parcel on clay limestone soil.
Composition – Brut Nature: Assemblage of 100% Pinot Noir from selected plots in Ville sur Arce.
The estate’s commitment to organic farming began in 2012 with the elimination of herbicides, leading to full organic certification in 2017. Production is deliberately limited, with about 7,000 bottles available for sale in 2024 and 10,000 planned for 2025. The first commercial vintage was released in January 2023, marking a new chapter in the family’s long history of winemaking.
