Domaine Fourrey is a family-run estate located in Milly, just two kilometers from Chablis, at the heart of the renowned Chablis vineyard region. Spanning 25 hectares, the domaine produces a comprehensive range of Chablis wines, from Petit Chablis and Chablis to Chablis Premier Cru and Grand Cru, as well as Bourgogne Pinot Noir.
The estate has been passed down through four generations, with Jean-Luc Fourrey at the helm since 1992. A graduate of the Beaune Viticulture and Oenology School, Jean-Luc leads a skilled team dedicated to both tradition and innovation. The vineyards are situated on both sides of the Serein River, in Milly and Fleys, benefiting from the region’s diverse terroirs.
Domaine Fourrey is committed to environmentally respectful viticulture and adaptation to climate change. Since 2017, the estate has held High Environmental Value (HVE) Level 3 certification, reflecting its dedication to biodiversity, reduced chemical use, and mechanical weed control. Initiatives include planting hedges, cover cropping, and eliminating herbicides in favor of mechanical weeding. The team also participates in research and trials to further sustainable practices.
In the cellar, winemaking combines tradition and modern technology. Grapes are immediately pressed using pneumatic presses, with careful temperature control during fermentation to preserve the wines’ aromatic freshness. Most wines are aged in stainless steel tanks, while select cuvées, such as Grand Cru, see oak barrels or amphorae. Malolactic fermentation is managed to stabilize the wines and enhance their aging potential.
Domaine Fourrey welcomes visitors by appointment to its tasting room, offering a chance to experience the passion and expertise behind its expressive, terroir-driven Chablis wines.
