
Champagne Colette Bonnet is a family estate located in the heart of the Côte des Bar, in the village of Éguilly-sous-Bois and the surrounding commune of Noé-les-Mallets. Founded in 1993 by Colette Bonnet, the estate spans 2.24 hectares of vineyards planted with Pinot Noir, Pinot Blanc, and Chardonnay.
The estate is renowned for its commitment to organic viticulture, with certification since 2009 (or earlier in some sources, but official certification is noted as 2009 in the dossier). The vineyards rest on the Kimmeridgian limestone and clay soils typical of the region, which impart a distinctive minerality and freshness to the wines. All vineyard work is carried out by hand, with a focus on preserving biodiversity and respecting the environment.
Since 2001, Colette Bonnet has operated her own pressing center in partnership with her brother Bélorgeot Thierry, also a local organic grower. The grapes are carefully pressed on site, and the musts are vinified at the Centre Vinicole de la Champagne (Chouilly), ensuring meticulous attention to quality and consistency. Recently, vinification has been handled by the Union Auboise in the Côte des Bar, continuing the estate’s tradition of collaboration with skilled winemakers.
Champagne Colette Bonnet is also known for its hospitality, offering a guesthouse for visitors and selling honey from the estate’s own organic beehives. With an annual production of just 5,000 bottles, each cuvée is a rare and authentic expression of the Côte des Bar’s unique terroir and the passion of its winemaker.
